The Last Macro Standing
Fat did its decade as the dietary villain; carbs did theirs. Protein never took a turn — and now it’s in your bread, your water, and your moral framework. A short history of the nutrient we can’t stop counting, and an audit of the counting.

There has never been a nutrient with a run like this. Fat spent the nineteen-eighties as a public menace; carbohydrates spent the two-thousands apologizing for existing. Protein — the third macronutrient, the one in the shaker bottles — has never done a single day as the villain in the whole history of modern dieting. It is the only thing left that people eat more of on purpose, out loud, with pride. Supermarkets now sell protein water, protein bread, protein ice cream and protein candy; “did you hit your protein?” has become a form of greeting. This is the story of how a molecule became a virtue.
Named champion at birth
The obsession is older than the science — it is, in fact, older than the word. When the Dutch chemist Gerardus Mulder described the substance in 1838, the name came from the great Swedish chemist Jöns Jacob Berzelius, who used it in a letter roughly three weeks before Mulder got it into print. He built it from the Greek proteios: of the first rank. It is the only nutrient whose name is a ranking. Protein was declared the most important stuff of life before anyone had the faintest idea what it did — a bet placed at the christening, and one the marketing department has been collecting on ever since.
The nineteenth century then produced the first full-scale protein influencer. Justus von Liebig, the most famous chemist of his age, taught that protein was the master nutrient — the very fuel of muscular work — and sold the doctrine in jar form through Liebig’s Extract of Meat Company, whose concentrated beef paste sat in pantries across the Victorian world and whose descendant brands survive today. The science underneath was wrong; muscles run mostly on other fuel, and the extract itself contained barely any protein at all. The company outlived the theory. It usually does.

The great protein fiasco
We have institutionalized this exact obsession before, at a scale no influencer could dream of. In the decades after the Second World War, international nutrition policy organized itself around the “protein gap” — the conviction, traceable to a 1930s account of childhood malnutrition in Africa, that the developing world’s defining deficiency was protein. A United Nations Protein Advisory Group convened in 1955; by 1968 the UN was warning of an “impending protein crisis,” and in 1970 the Food and Agriculture Organization published a report titled, without visible irony, Lives in Peril: Protein and the Child. Laboratories produced heroically strange remedies — fish protein concentrate, single-cell protein grown on petroleum byproducts — all to carry protein to the masses.
Then, in 1974, the nutritionist Donald McLaren detonated the whole edifice in The Lancet, in a paper he called “The Great Protein Fiasco.” The crisis had been misdiagnosed from the start, he argued: the real shortage was of food and calories, not of protein specifically. And the gap had already quietly closed — not because anyone had been fed, but because the experts had progressively lowered the recommended-intake figures until the deficit, on paper, simply evaporated. He tallied the arithmetic saving at more than ten million tons of protein a year. The doctrine collapsed with startling speed. The episode reads now as a dress rehearsal: proof that protein fever can seize a UN agency as easily as a group chat — and resolve its own emergency by editing a spreadsheet.

The redemption of whey
Meanwhile the modern obsession’s key ingredient was still being poured away. Whey — the watery liquid left when milk is turned into cheese — was for most of history a disposal problem: fed to pigs, spread on fields, or flushed into rivers, where its sugars made it, gallon for gallon, as much as a hundred times more polluting than domestic sewage. The muscle subculture had been drinking protein powders since the fifties, when mail-order impresarios like Bob Hoffman and the nutritionist Rheo H. Blair sold tubs to bodybuilders out of the back pages of muscle magazines. But it was membrane filtration, refined through the seventies and eighties, that turned cheese runoff into whey concentrate and isolate — and turned a pollutant into the flagship ingredient of a supplement industry now measured in the tens of billions of dollars.

Why the fever broke out now
The current mania is what happens when several respectable currents converge and marketing notices. Science contributed the protein leverage hypothesis — the elegant, still-debated proposal that appetite is regulated by protein first, so diets diluted with refined carbohydrates and fats drive us to overeat calories chasing a protein target. Fitness culture completed its long swing from thin to strong, and muscle graduated from vanity to something discussed like a retirement account. Public health discovered sarcopenia, the muscle loss of aging, and put protein at the center of the response.
Then came the accelerant nobody predicted: GLP-1 drugs. Millions of people eating dramatically less overall are now advised to protect their muscle by making what little they eat count — which in practice means prioritizing protein. The one nutrient with no villain era got the endorsement of the biggest pharmaceutical story of the decade. The food industry, for its part, noticed years ago that a protein claim commands a premium, and began printing it on products that always contained protein and on products that barely do. The result is the shelf we shop today, where the word functions less as chemistry than as absolution.

What the counting is for
Notice what the ledger shows: the obsession is not entirely wrong. Protein really is more satiating; lifters really do benefit from more than the government floor; the aging really should mind their intake. The myth is not the nutrient — it is the arithmetic religion built around it, the conviction that a day of eating can be graded, and that the grade is a number of grams. Tracking offers what diets always sell: control. Protein is simply the last macro you are allowed to want more of, which makes it the perfect denomination for dietary virtue.
And so the whole history comes around. The Victorians kept a jar of Liebig’s extract in the pantry; the postwar planners had their petroleum yeast and fish flour; we carry shaker bottles and read labels that shout the one word never asked to apologize. The name was a bet, placed in 1838, that a single substance would turn out to be what life is mostly made of. As biochemistry, that bet has been paying out modestly and honestly for nearly two centuries. As marketing, it has never once missed.
